Parsley: This refreshing herb is good for your breath and is apparently refreshing to the rest of your body. Like all green herbs, it is loaded with chlorophyll, which is just good for people. It helps you build tissue and fight inflammation. It has even been shown to help manage blood sugars and helps to keep your weight in check. More studies are needed, but it may even help to fight cancer. All that, and a breath freshener too? Who could ask for more?

Greek Country Salad

ingredients

  • For dressing
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon honey
  • 1/3 cup extra-virgin olive oil
  • For salad
  • 1/2 pound escarole (preferably pale inner leaves), chopped (1 quart)
  • 1/4 pound tender young turnip greens, trimmed and finely chopped (2 cups)
  • 1/2 pound dandelion greens, tough stems discarded and leaves cut crosswise into 0.25 inch slices (2 cups)
  • 1/4 cup baby spinach (2 cups)
  • 1 cup watercress sprigs, trimmed
  • 1/2 cup chopped fresh dill
  • 1/4 cup fresh flat-leaf parsley
  • 1/4 cup thinly sliced scallion

directions

Make dressing: Whisk together lemon juice, salt, and honey in a large salad bowl and add oil in a slow stream, whisking until blended.

Make salad: Add salad ingredients to dressing and toss to coat. Season with salt and pepper.
