Beets: These fat purple (and many other hued) roots are delicious and extremely good for you. They have a combination of chemicals that work to stimulate the blood vessels, helping your heart and brain to stay in top form. Beets can turn your urine surprisingly red, but that's completely normal, even if disconcerting.

Garlic: Garlic is in the same family as onions and leeks, and purportedly provided ancient Roman soldiers the courage to battle the barbarians. Whether or not it gives you courage, it is known to lower blood pressure, which is great for your heart and helps prevent stroke. In addition, it has a long history as a digestive aid, so don't be shy with this wonderful herb, no matter what it does to your breath!

Halibut with Roasted Vegetables and Spicy Cilantro Sauce

ingredients

  • 4 pounds winter squash (about 2 medium)
  • 1 pound beets (about 2 large)
  • 1 medium onion
  • 2 teaspoons vegetable oil
  • 4 large garlic cloves
  • 4 5 ounce skinless halibut fillets
  • Accompaniment: spicy cilantro sauce

directions

Preheat oven to 450 degrees. Halve squash lengthwise and discard seeds. Peel squash and cut enough 0.75 inch cubes to measure 6 cups. Trim and peel beets. Cut beets and onion into 0.75 inch cubes. In a 17- by 11 inch roasting pan toss squash, beets, and onion with oil until coated and season with salt and pepper.

Roast vegetables in middle of oven 25 minutes. Thinly slice garlic and scatter over vegetables. Roast vegetables 8 minutes more, or until barely tender. Season halibut with salt and pepper and arrange on top of vegetables. Roast halibut in middle of oven until just cooked through, about 8 minutes.

Serve halibut over vegetables with sauce.
