Broccoli: Although not the favorite of many kids, broccoli is one of the healthiest foods you can find. It is a member of the cabbage family and is rich in isothiocyanates, sulforaphanes and indoles, which are big words for powerful cancer fighters. It is chock full of nutrition, and on top of it all is good for your eyes. All parts of the broccoli are good for you, including the stems and leaves. Even the sprouts are touted as alarmingly healthy. So it's probably time to get over your aversion and bite the broccoli.

Nori Or Lettuce Leaf Wrap-Ups

ingredients

  • 8 whole nori sheets or large lettuce leaves
  • 1 cup guacamole
  • 1 cup grated carrot
  • 1/2 cucumber, cut in half horizontally, seeded, and sliced into 0.25 inch slices
  • 1 cup sprouts (alfalfa, broccoli, or mung bean)
  • 1 cooked chicken breast, cooled and shredded, or 1 cooked salmon fillet, cooled and flaked, or 1 package (1 3/4 cups) firm tofu, cut in 1 inch strips, sauteed, and cooled (optional)

Place 1 nori sheet, shiny side down, on a clean, dry surface. If using lettuce leaves instead, wash and dry whole leaves and cut off the bottom 1 inch of stem.

Drop 2 tablespoons of guacamole onto the nori sheet or lettuce leaf. Spread the guacamole across the sheet using the back of a spoon, being careful not to tear the sheet or leaf.

Spread 2 tablespoons each of the carrot, cucumber, and sprouts across the guacamole.

Lay 2 tablespoons of the chicken, salmon, or tofu (if using) across the vegetables and roll up the nori or lettuce leaf like a burrito, gently rolling 1 side over until the wrap is complete.
